Originally founded in 1992 under the name Domaine du Bois Guillaume, the Devevey family farm was located in Demigny on the northern border of the Saône-et-Loire department in Southern Burgundy. Their small farm is comprised of 2 hectares of Gamay, Pinot Noir, and Aligoté, which passed through four generations leading to Jean- Yves taking over after his father had retired.

Jean-Yves had five years of experience in the wine export business and wanted to expand upon the small family farm. He decided to rent vineyards within the Côte de Beaune region only a few kilometers away. In 2002 négociant Devevey was founded; marketing the Domaine wines under this new label allowed the wider purchasing of Côte de Beaune grapes. Updates such as the cellar and the vatting rooms were enlarged, and there were also new investments made in the vinification equipment.

Today the Domaine manages just over 8 hectares of vines, with ownership of 4. Though there was experimentation during the first 2 years with chemical pesticides, herbicides and organic/mineral fertilizers, in 1995 commercial fertilizers were replaced with natural compost and manure while also abandoning chemical pesticides and herbicides in favor of biodynamic practices.

It was in 2003 in the hands of Jean-Yves that marked the complete discontinuation of all chemical products, including fungicides. In 2011 they began the process for organic certification. The wines were certified organic beginning in 2014 (soil tillage is done 2 to 3 times per year depending on weather).
 Yields are managed with judicious pruning, precise canopy management, and green harvest techniques in order to encourage sustainable yields that take into account each vine individually rather than apply a fixed yield standard to the entire vineyard.

Harvests are done by hand with careful handling from transportation to vatting and utilization of a pneumatic membrane press. The whites undergo secondary fermentation in barrel and the reds in stainless tanks. All of the wines are barrel-aged with around 10% new wood. The whites undergo a light filtration and minimal addition of sulfur just to preserve freshness. The reds are bottled immediately according to the same schedule without fining or filtering.

The guiding principle of their working method is to carefully consider each step, from vineyard to cellar, making certain that every procedure is appropriate and complementary. Each detail is important; nothing is neglected.

They always keep in mind that the final destiny for the wine is the table, and the wine should express its place of origin with sincerity, dignity, and charm.
