Eremitas Paulo de Tebas is an organic white wine aged in a cement tank and made by Mateus Nicolau de Almeida with the Rabigato native variety in the DOC Douro (Portugal).
The grapes come from the winery’s highest altitude plots. These vines lie at 400 metres above sea level and are planted on shallow and stony soils. They are cultivated using organic agriculture with no pesticides, herbicides or chemicals that could damage the natural environment.
In the winery, the grapes are first macerated with the skins for a few hours in a “calcatórium” (granite basin). They are then pressed and the must ferments spontaneously in concrete tanks without temperature control for 12 months.
