Anne-Sophie Dubois was only 25 years old in 2007 when she took over this 8-hectare domaine in the heart of Fleurie. Her parents, vignerons in Champagne, owned this property, but rented it out until Anne-Sophie decided to take it over after she completed her studies in Burgundy. Soon after, she debuted with the 2010 vintage.  This was after she had worked the soils for three years in preparation!  Today, she still only vinifies 2.5-hectares, selling the rest to a co-op. Anne-Sophie looks for fruit and finesse, rather than extraction. Dubois farms organically, encouraging the growth of grasses between rows, mulching with cut shoots from dormant pruning and using the occasional organic compost. Her vines are between 40 - 60-years old, planted at high density in granitic-rich soils, which further limits yields, driving up the flavor content in her grapes. She harvests by hand and uses no pumps, making wine according to the Jayer method (Burgundy's Henri Jayer)—an approach that includes destemming instead of using whole bunches—with indigenous yeasts. She ages the wines in tanks and older barrels, then bottles unfiltered. The vines for Fleurie "L'Alchimiste" are 40 plus years old and planted on the granitic sands in the lieu-dit of Les Labourons. The fruit is hand harvested and hand sorted. The grapes are de-stemmed and fermented using native yeasts in tank. Half the wine is aged in casks of 3 - 7 years with lees contact. "L'Achimiste" is bottled was without fining or filtration, after 13 months, with just a small amount of SO2 just prior to bottling, to aid in traveling without any problem. The 2019 shows of the richness of the vintage with dark berry and spice on the nose. The wine is medium weight, with a silky texture and long, drawn out finish. This can stand up to richer stews or braises, and while drinking well right now, will continue to evolve in bottle over a handful of years.
