With our apologies to Franciacorta, it is Prosecco that is Italy's most famous sparkling wine.

Prosecco is both the name of a town and also a grape (although it was renamed Glera). As Italy's most prominent sparkling wine, there are many different styles and quality levels within the category. Prosecco can come from nine different provinces within the Veneto and Friuli Venezia Giulia.

Finding quality in the world of Prosecco can be a bit like finding a needle in a haystack. Luckily for you, we have good eyesight!

We are so excited to introduce the beautiful sparkling wines of the Ferraro family of Bele Casel. This is one of those rare examples of a small, family run estate dedicated to quality over quantity. The beautiful vineyards of Bele Casel are located in the Asolo DOCG, one of only two DOCG's for Prosecco. The family farms their hillside vineyards organically, and they are involved in every aspect of the business.

Asolo is also well recognized for their tradition of producing "colfòndo," a sparkling wine refermented in bottled, left on its lees and bottled with them still intact. To drink a "colfòndo" prosecco, the drinker should gently turn the bottle upside down, allowing it to become cloudy, before opening and drinking.

To introduce you to this style, we have a very special, small production example from Bele Casel. "Quindici" is in reference to 15, and in this case this is a vintage sparkling from the 2015 harvest. The vineyards of Bele Casel are co-planted, predominantly with Glera, but also with grapes such as Bianchetta, Perera, Marzemina Bianca and Rabbiosa. After harvest, the grapes go into a pneumatic press, followed by a static racking of the must, and then fermented in tank between 64 and 68 degrees Fahrenheit. The wine is aged on its lees for three months. The wine undergoes secondary fermentation in bottle, and it is left for over 30 months on its lees before it is sold.

The result wine offers beautiful fruit, with elegant stone fruit and citrus notes. It is mineral, fresh and finishes bone dry.

Remember to gently turn the bottle upside down to make the wine cloudy before opening. The lees are an integral part of the "col fòndo" experience.
