Bele Casel Asolo Prosecco Extra-Brut NV

It has been about a year since we first introduced our customers to the magnificent sparkling wines of Bele Casel. 

Now we want to introduce you to their best buy, a sparkling wine that offers incredible value for its quality. 

Bele Casel is a 12 hectare estate located in the Asolo DOCG in Northeast Italy. Run by the Ferraro family, they farm organically from vineyards in three communes:  Cornuda, Maser, and Monfumo. All vineyards are located on hillsides, and everything at Bele Casel is done with the goal of making high quality wine. 

Their Extra-Brut comes from vineyards in Monfumo. It is produced primarily from Glera, but also has other local varieties included in the blend, Bianchetta Trevigiana, Perera, Rabbiosa, and Marzemina Bianca.

The grapes are soft pressed with a pneumatic press. and fermented in tank. The juice then ages in stainless steel for seven months before it undergoes secondary fermentation via the Martinotti method. After it is bottled it is given a dosage of 4 g/l, leaving this dry and well-balanced.

Beautiful aromas of fresh pear and apple lead into a well-balanced and elegant attack on the palate. This is deliciousness in a bottle.

This is perfect as an aperitif, but can be paired with sashimi or other simple fish dishes.
