Amongst the hills of Chianti, we find a winery that boasts more than just good wine.  We come across one with a story steeped in historical importance for elevating the status of Chianti Classico, and Tuscan wine for that matter.  

After winemaker Marco Pallanti was handed over the reigns at Castello di Ama, he went out and organized his vineyards with distinction by site.  He based this on soil type and exposition, classifying each micro-climate to better understand each site's optimal ripening levels and overall quality.  This was a 10-year project that he graciously took on in order to present the best of the best.

Pallanti was also the President of the Chianti Classico Consortium in which he spent many efforts elevating the status and quality of the region.  Under Marco’s leadership the Consortium agreed that beginning with the 2008 vintage, all wines labeled with Riserva must be tasted and approved by a panel at the Consorzio. The panel is looking to keep wines lacking the quality level deemed necessary for a Chianti Classico Riserva from being able to use the term on the label.  This was absolutely integral to getting the consumer away from past opinions of Chianti, once associated exclusively with wicker-basket bottles and inexpensive bulk production.  

Marco has since stepped down as president and devotes his time to his vineyards, with his wife.  "Ama'' is their flagship Chianti Classico bottling, and one of their best.  It is a wonderful example of the quality you now expect from this classic region.  Juicy red fruits of cherry and raspberry emanate on the nose, with hints of spice enveloped in a velvety palate, due to the calcareous clay-rich soils.  Of course you'll want a bottle or two of this on hand for any given spaghetti supper.  But truth be told, Sangiovese is one of the most versatile varietals to pair with much more than simply Italian cuisine.
