If I were a betting man, I would guess that most wine drinkers first experience with Italian wine came in the form of a glass of Chianti Classico from their local Italian restaurant.  This is both good and bad. Sangiovese is one of Italy's most noble grape varieties, and an ideal accompaniment to many Italian-American dishes. There is and has been for some time a lot of inexpensive and often times dilute wine that has made it to our shores from Tuscany. Your experience at that restaurant may then bring either good or bad memories? The good news is that there has never been a better time to drink Chianti Classico! Many producers today have kicked it into high gear, working hard in the vineyard to reduce yields and improve farming practices. Many have also put effort in the winery to produce elegant and complex Sangiovese. The perfect example of this is Castello dei Rampolla, a historic producer in Panzano, within the DOCG of Chianti Classico. While wine can be traced to this estate dating back to 1739, it wasn't until the mid 1970's that dedication to world-class Chianti became the goal. Over the years, with the help of legendary winemaker Giacomo Tachis, the di Napoli family has converted to Biodynamic principles in the vineyard and cellar.  Their 2014 Chianti Classico is absolutely delicious, a blend of 90% Sangiovese with the remainder from Merlot and Cabernet Sauvignon. It has that classic red cherry note, along with spice and savory herbs on the medium-bodied, structured finish.  Great Chianti Classico is a wine for the table, so pair this with your favorite recipe of eggplant parmesan.
