Last week Hannah and I enjoyed a special treat. From the depths of my cellar, or really just a box I kind of forgot about, we found a bottle of 2010 Celler Pardas "Pur Xarel-lo." One of Catalunya's greatest white wines, and best examples of the Xarel.lo grape, we got a glimpse at the aging ability of this great wine. Xarel.lo is a varietal that is often found in Cava, the Penedès regions most famous export. Ramon Parera and his partner Jordi Arnan are known as defenders of the Xarel.lo grape and built a winery with the goal of showing the maximum expression of the varietal. Just tasting that beautiful 2010 vintage the other week, we can say, they have succeeded. The work starts in the vineyards of Finca Can Comas with Jordi. His farming is impeccable, dry-farmed, no ploughing, and no chemicals or fertilizers. When Ramon takes over in the winery, his goal is to gently treat the grapes, and let them express their terroir. Grapes are hand harvested in small crates, no pumps are used, everything flows by gravity. All wines are native ferment, and Pardas uses a mixture of concrete and old oak for fermentation and aging. We just received the gorgeous 2016 vintage of "Pur Xarel-lo," the flagship wine of the estate. Beautiful aromas of white peach, flowers, and a saline quality. The weight is distinctly medium bodied, with beautiful fruit on the palate and a deeply mineral personality. A great wine to pair food with, a fennel crusted pork chop would be a great pairing, or even simply grilled langoustines. You can drink this now, but it can also age it for a few years for added complexity. Pardas has done it again!
