There's not much to be said about Celler Pardas that we haven't already written before. Their wines are regular favorites here at the shop, and have been for many years. Uniquely situated in the land of Cava production, lifelong friends Ramon Parera and Jordi Arnan, took the bold move to focus on still wines shortly after the purchase of their estate, Finca Can Comas.

Not only do we love how they beat to their own drum, but we admire how honest the wines are, not mucked up with the farming and winemaking tricks that have become synonymous with mainstream Spanish wine over the past decades. We get to see varietals such as Xarel.lo, which is almost exclusively destined for Cava production, shine and reveal its potential as a serious white wine. Pardas' success has been instrumental in influencing other vignerons to begin to replant with more local varietals and embrace the terroir of Spain.  Once a pack of lone wolves, are now getting the respect and admiration they so do deserve.

"Rupestris" is a blend of old-vine Xarel.lo and Malvasia de Sitges, farmed organically, and fermented in stainless steel. There's good body, and lovely pear and apple fruit, but it's still a nimble wine with bright, fresh acidity. Craig thinks the 2018 Rupestris is the best version of this wine they have ever produced. We think you will agree!
