Clos Cibonne "Cuvée Tradition" Rosé '16

Why, you may ask, are we featuring a 2016 rosé instead of perhaps a 2018? Great question! Let's back track to a little bit about Clos Cibonne, and then you'll find your answer. Clos Cibonne has been a property in Côtes de Provence since 1797. The Roux family purchased it in 1930, and it has been a family affair ever since. The heart of the estate is Tibouren, a varietal native to the area, what Clos Cibonne soon became synonymous with, which allowed Tibouren to receive special permission from the A.O.C. to list the grape on its labels. The winery focused on rosé with old-vine Tibouren, and also make one still red wine. On top of one unique factor was born another - Clos Cibonne's aging process of their rosé. After harvest, the wines are fermented in stainless steel and then aged under fleurette (a thin veil of yeast) in 100-year-old, 500L foudres. Alas, our answer! This folks, is a rosé that benefits with age and time in bottle, resulting in what is still a highly fresh rosé, yet structured and complex. The estate's vineyards are located a mere 800 meters from the coast and are surrounded by hillsides in the base of a bowl that faces the sea. This topography creates air circulation that allows for perfect maturation of the grapes. All of these factors combined, create a fresh yet complex rosé unlike any other. Expect classic provençal tones in florally and subtle brininess, with vibrant fruit tones of red berries and orange citrus. An incredible food wine.
