Limniona is surely an underdog, and hasn't truly been discovered quite yet by most of the world, but with Christos' passion for the grape and cultivating it from near extinction, you can see why he is so fascinated with this varietal; it is definitely on the verge of being a rising star for Greek wine, hailing from right here in Thessalia. It has immense concentration of flavor and color, but does not translate directly into its structure, which shows modest acidity and tannin. This shows sour cherry, strawberry jam, violet, hints of spice and a strong mineral presence. The soils here in the sub-region of Tyrnavos have deep clay deposits that dominate the terroir, with sand, flint and calcium deposits left over from an ancient riverbed. Spontaneous yeast fermentation occurs in large Austrian Fermentors, aged furthermore for about 12 months. Meant to be enjoyed now and in the next 5-6 years. This wine is a very versatile food pairing wine - red meat, white meat, seafood, some cheeses, pasta and even spicy dishes due to the freshness and vitality of this wine.
