Stéphane Lucas of Le Champ d’Orphée in Gaillac makes what I might describe as the perfect reds. They are not the most complex, and don’t peacock and strut their stuff in a tasting lineup but when I open a bottle, they never fail to leave me content and sated. It is the kind of wine you might find by the carafe at an anonymous corner bistro in Paris that years later you still remember, though may have a hard describing why. The importer describes their mission statement as "We want our wines to be the first bottles emptied at the dinner table, but the longest remembered”, these wines perfectly exemplify this desire.

Stephane lives on his tiny farm, just shy of two acres planted to the local grape Braucol. The grapes are worked organically with bio-dynamic treatments, including some experimental natural treatments such as using essential oils and algae to substitute for chemical treatments. Legumes and grains are planted between the rows each fall after harvest to aid soil health and protect against erosion. He is decidedly minimalist in the cellar fermenting with native yeast to best represent the place, using low amounts of sulfur to let the wines express themselves vibrantly and working with neutral vessels, in this case stainless steel aging for 10 months, after a straightforward 12 day maceration. 

A wine for Cabernet Franc lovers, this is all fresh purple fruit with pretty floral notes and stony mineral without heaviness. Superbly balanced medium body focussed on the fruit but not lacking in herbal notes and savory spices. This is incredibly food friendly, to take a note from the cuisine of this part of France pair it with a hearty Cassoulet white bean stew with confit duck and garlic sausage or hearty green lentils, but I’d bet it would be delicious with a Pepperoni pie from your favorite pizzeria too!
