Burgundy
Reds for Simon Bize are all about precision. A delicate wine, capable of representing its respective terroir, with focus on finesse over power. The reds generally see partial to whole cluster fermentation, done in wooden vats by foot, aiding to that finesse by not allowing seeds to break, releasing any astringent or bitter character. After fermentation, the wine is aged in barrel for about 1 years. Little to no new oak is used in their red wine production.
Les Perrieres is less than 2 hectares, composed of old vines from 1971 and 1974, on a hillside overlooking Savigny, full of pebbly and rocky soil. The small yields contribute to great concentration, creating a dense, relatively firm structure. but with that classic juicy freshness of fruit that keeps you coming back glass after glass.
