On the outskirts of southwest Burgundy, located along the Loire River, is the Saône-et-Loire appellation. Now considered an ancient area for vinegrowing, winemaker Jean-Claude Berthillot is reclaiming this area to showcase its potential through his vision of elegant, age-worthy, mineral-driven wines.

What was originally considered a home to settle into the country, became a place to house and hone in on his passion for wine. He joined the local co-op winery, where he learned quickly and soon became head of it. The inevitable next step followed shortly after - obtaining his own vines to plant and a cellar, built out just below his house.

Jean-Claude has 8 hectares in total, spread across 5 parcels. There are two main soil types here, clay-calcareous and flint, and Jean-Claude vinifies by soil type. In the vineyard he works entirely organically, which he is certified in. In the cellar, only indigenous yeast is used. There is no new wood, only stainless steel and old barrels of various sizes.

"En Saute-Lièvre" is Jean-Claude's most Burgundian expression of Chardonnay that he currently bottles. Aromas of lemon curd and a touch of smoke are present, but subtle and at easy, integrating into a more mineral, floral tone at this point in time, from having had some time in bottle. This wine is creamy and full-framed, yet retains intense, racy acidity.
